Ingredients
½ cup low-fat small curd cottage cheese
1 1/4 cups alternative Confectioners' sugar
½ cup unsalted butter (1 stick)
1 teaspoon vanilla extract
2 cups almond flour
1 cup vanilla protein powder
1 cup no sugar added chocolate chips
½ cup chopped pecans
Directions
  1. Position 2 oven racks to upper and lower positions; preheat oven to 350°. Line 2 rimmed baking pans with parchment paper.
  2. In food processor, purée cottage cheese on high until smooth; transfer to large bowl. Add 3/4 cup alternative confectioners' sugar, butter and vanilla extract; with mixer on medium-high speed, beat 2 minutes or until light and fluffy, scraping down bowl occasionally.
  3. Add flour and protein powder; with mixer on medium-low speed, beat 2 minutes or until incorporated, scraping down bowl occasionally.
  4. Add chocolate chips and pecans; mix 30 seconds or until just incorporated. Makes about 3 1/2 cups dough.
  5. Using 2 small spoons or small ice cream scoop, drop 1 1/2-inch mounds dough, 2 inches apart, on prepared pans; bake 15 minutes or until lightly browned and set, rotating pans once halfway through baking.
  6. Cool cookies on pans on wire racks for 5 minutes.
  7. Place remaining 1/2 cup Truvia in small bowl. Working with 1 warm cookie at a time, carefully roll cookies in Truvia and place on same pans; cool completely. Makes about 28 cookies.
