Jake Cohen’s Apple-Cardamom Galette

  • For The Dough:
  • 3 cups all-purpose flour, plus more for rolling
  • 1¼ teaspoons kosher salt
  • 1 teaspoon granulated sugar
  • ¾ cup ice-cold water
  • For the Filling:
  • 2 pounds Honeycrisp apples, cored and sliced ¼-inch thick
  • ½ cup sugar
  • ¼ cup all-purpose flour
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cardamom
  • 1 egg beaten
  • 2 tablespoons wildflower honey
  • Powdered sugar, for garnish


  1. 1Make the dough: In a medium bowl, whisk together the flour, salt and sugar. Using your fingers, work the butter into the flour mixture until pea-sized pieces form. Add the water and continue to knead until a dough forms. Cover the dough with plastic wrap and let rest in the refrigerator for 30 minutes.
  2. 2Meanwhile, make the filling: In a large bowl, toss the apples with the sugar, flour, lemon juice, lemon zest and cardamom.
  3. 3Make the galette: Preheat the oven to 375º. On a lightly floured surface, roll out the dough into an 18-inch circle, ⅙-inch thick. Transfer the dough over to a sheet of parchment paper and pile the apples in the center, leaving the outer 3-inches of dough bare.
  4. 4Fold the outer ½-inch of dough over itself to form an even lip around the galette, then begin to fold the dough over the apples. Brush the outside crust liberally with the beaten egg. Drizzle the honey over the apples.
  5. 5Bake until the galette is golden brown, 45 to 55 minutes. Let cool completely, then dust with powdered sugar, slice and serve.
