Ingredients
1 cup skim milk
1 cup plain nonfat Greek yogurt
3 Tbs honey
1 tsp vanilla extract
1/4 tsp apple pie spice
1/4 cup chia seeds
2 cups chopped apples
1/4 cup chopped pecans or reduced-fat granola (optional)
Directions

1. In a microwave-safe bowl whisk together skim milk, yogurt, honey, vanilla, apple pie spice and chia seeds. Let stand 15 minutes.

 

2. Microwave on HIGH in 15-second intervals until consistency is thick and pudding- like, whisking in between intervals.

 

3. In each of 4 tall glasses layer chia pudding, apples and pecans or granola (if desired). Repeat layers as desired until all ingredients are used. Cover and refrigerate until ready to serve, or serve immediately.
