Ingredients
4 bags (2 ounces each) sliced green apples
4 small parsnips, cut diagonally into ½-inch-thick slices
2 tbs chopped poultry herbs
1 tbs olive oil
8 slices bacon
24 oz 1 package pork loin
8 toothpicks
Directions

1. Preheat oven to 375°; line rimmed baking pan with parchment paper. On prepared pan, toss apples, parsnips, herbs and oil; arrange on outside border of pan.

 

2. Lay bacon slices vertically on cutting board, slightly overlapping; place pork in center. Wrap ends of bacon over pork and secure with toothpicks; place in center of pan and bake 1 hour 5 minutes or until internal temperature of pork reaches 145°, stirring apple mixture once. Transfer pork to cutting board and tent loosely with foil; let stand 10 minutes. Toss apple mixture with pan drippings; cover to keep warm. Makes about 2 cups apple mixture.

 

3. Remove toothpicks from pork; cut crosswise into 8 (¾-inch-thick) slices; serve with apple mixture.

 

Chef Tip: Customize this recipe by swapping the pork loin with boneless, skinless chicken breasts and/or the parsnips with steamable fingerling potatoes. Wrap chicken breasts with bacon; bake 25 minutes or until internal temperature reaches 165°.
