Ingredients
1 Package Pickled Beets
1 Package Green Leaf Lettuce
1 orange, sliced
½ cup walnuts
4 ounces Vermont Creamery Classic Goat Cheese
1 tablespoon mustard
1 tablespoon honey
¼ cup olive oil
Salt & Pepper, to taste
Directions
  1. In a small bowl add mustard, honey, salt and pepper. Whisk together until combined. Slowly add olive oil and keep whisking into a creamy smooth dressing.
  2. On a large plate arrange the lettuce, beets, oranges, walnuts and crumble goat cheese. Drizzle the dressing on top and enjoy.
