BIONATURAE ORGANIC EXTRA VIRGIN OLIVE OIL, 17 fl oz 100% of our olives are grown on small, certified organic, local family farms in the Veneto region of Northern Italy (We do not buy any olives on the open market!) This region has a cool climate which allows the olives to ripen slowly, which gives the oil a better flavor (In warmer climates, the olives ripen quickly, which can impart a bitter flavor). All of our olives are harvested by hand, then cold expeller pressed (at temps no higher than 80.6o Fahrenheit). We press the olives the same day as harvest, to avoid oxidation. Before bottling, the oil is filtered because we believe the sediment in unfiltered olive oil may become rancid.
