1/3 cup mayonnaise
1 tablespoon Dijon mustard
2 cans (5 ounces each) solid white albacore tuna in water, drained
1/4 cup finely chopped celery
3 tablespoons finely chopped red onion
2 tablespoons fresh parsley plus additional for garnish (optional)
16 woven wheat crackers
1/4 cup shredded cheddar cheese
1/2 small Granny Smith apple, finely chopped
Directions

1. In large bowl, whisk mayonnaise and mustard; fold in tuna, celery, onion and parsley. Makes about 1 1/2 cups.

 

2. Top crackers with tuna mixture, cheese and apple.
