6 mini sweet peppers, tops trimmed and halved lengthwise
24 toothpicks
3 mini cucumbers, each cut crosswise into 16 (¼-inch-thick) slices
12 black olive slices
12 grape tomatoes
Directions

1. Transfer hummus to small zip-top plastic bag and snip bottom corner with kitchen scissors; fill pepper halves with hummus.

 

2. Using 2 toothpicks, attach 4 cucumber slices to each pepper half to make “wheels;” place 1 olive slice and 1 tomato in each pepper half to make “steering wheel” and “driver.” Makes 12 cars.
