
1. Make the BBQ sauce in a medium saucepan by combining apple cider vinegar, ketchup, honey mustard, Worcestershire sauce, hot sauce, brown sugar, ½ tsp. salt, and ½ tsp. pepper. Heat to a rapid simmer then reduce heat and simmer for about 15 minutes or until thickened. Stir occasionally.
2. Pour BBQ sauce over the chopped pork and mix until pork is covered. Set aside.
3. Mix up the egg mixture by combining Eggland’s Best eggs, ricotta cheese, chives, 1 tsp salt, and 1 tsp. pepper. This can be done while the BBQ sauce is cooking.
4. In a fry pan with an 8-inch bottom, melt about ½ tbsp. butter. Pour in ½ cup Eggland’s Best eggs and ricotta cheese mixture. Cook on medium heat until just set, about 1-2 minutes. Top with 1/3 cup BBQ meat and ½ cup of shredded cheese. Lay one tortilla on top and press down so it will stick to meat, cheese, and EB eggs. Flip over to brown the tortilla, about 30 seconds. Fold in half and serve.
