16 pieces deveined and cleaned shrimp (4 per person)
2 garlic cloves
1/2 cup orange juice
1/4 tsp ground Cayenne pepper
1/2 tsp Old Bay Seasoning
2 tbsps salted butter, divided
2 large heirloom tomatoes
Arugula (or some form of lettuce)
1Thinly slice your garlic cloves. Add garlic, cayenne pepper, and Old Bay Seasoning to ½ cup of orange juice.
2In a large skillet, melt 1 tbsp of butter over high heat. Once butter is melted, add shrimp. Cook them for about 40-60 seconds on each side; if shrimp begins to curl up, you have overcooked them. Remove the cooked shrimp from the pan, but leave the heat on high.
3Once the butter and drippings begin to smoke ever so slightly, add the spicy orange garlic mixture to the pan. Stir well. Add another tablespoon of butter to the sauce, occasionally stirring until the sauce begins to thicken.
4Return the shrimp to the pan, add some diced fresh basil, toss in sauce, for about 1 minute.
5Lay a piece of lettuce on each plate, add 4 shrimp to each plate. Add sliced tomatoes and a handful of olives. Voila!
